Recent Mintel Research finds that the gluten free food market is estimated to reach sales of $8.8 billion in 2014 representing a 63% increase over just 2012 - 2014.

Gluten free products appeal to a growing audience with 41% of US adults agreeing that gluten free foods are beneficial for everyone.

From 2013 to 2014, there has been a 47% growth in Americans following a gluten free diet.  Currently 22% of Americans follow a gluten free diet which represents 72 million people.

FACTS ABOUT GLUTEN AND THE DRIVING FORCE BEHIND THIS SHIFT IN EATING HABITS
This not a fad diet. 

A review paper in The New England Journal of Medicine listed 55 "diseases" that can be caused by eating gluten. Among the 55 “diseases” are osteoporosis, irritable bowel disease, inflammatory bowel disease, anemia, cancer, fatigue, canker sores, and rheumatoid arthritis, lupus, multiple sclerosis, and almost all other autoimmune diseases. Gluten is also linked to many psychiatric and neurological diseases, including anxiety, depression, schizophrenia, dementia, migraines, epilepsy, and neuropathy (nerve damage). It has also been linked to autism.

According to a recent article and what my wife had been told by her doctor, gluten sensitivity is actually an autoimmune disease that creates inflammation throughout the body, with wide-ranging effects across all organ systems including your brain, heart, joints, digestive tract, and more. It can be the root cause behind many different "diseases." To correct these “diseases”, you need to treat the cause, which is often gluten sensitivity.
